     Chickpea Salad with Ginger

Ingredients
1 tablespoon ground cumin
3 cups canned chickpeas (drain and rinse well)
2 or 3 bell peppers (Red, yellow, or orange)
1 red onion, diced
1 1-inch piece of ginger, peeled and minced
Chopped fresh cilantro leaves.
1 tablespoon sugar
Juice from 1 Lemon
 
Salt and pepper to taste.

Instructions
Lightly toast the ground cumin. Then add the cumin to the lemon juice you already squeezed, mix in the sugar as well.
In a large bowl, toss all the ingredients.
Pour the lemon dressing over the salad and mix again, add salt and pepper to taste.
