Cauliflower and Cheese Bake

Ingredients
-
1 head of cauliflower
-
3/4 stick of melted butter
-
2 eggs, well beaten
-
1/2 cup heavy whipping cream
-
1-1/2 cups of shredded cheddar cheese plus an additional 1/2 cup for the topping
 

Instructions
Wash cauliflower, cut it up into large pieces and put in a glass bowl with plastic wrap tightly on top, cook in the microwave for 5 min. on high. You want the cauliflower so that a fork will stick into it only, not mushy. Transfer cooked cauliflower to a large casserole dish.
Beat the melted butter, eggs and whipping cream together in the bowl, add the shredded cheese, then pour over the top of the cauliflower, stir.
Bake in a 350 degree oven for about 30 min. or until it's browned well. Remove, add the other 1/2 cup of shredded cheese and put under the broiler until top is crusty.
Serving Suggestions
If you don't want to go low-carb, crumbling flake cereal on top before baking is extra yummy!
