saucepan with lots of water, cook garlic, boil it until very soft put in cool water squeeze garlic into a bowl. add salt and pepper rub a little olive oil on roast then rub garlic mixture all over the meat. refrig over night
preheat oven to 425 degrees cook roast (cook with bone side down) for 25 minutes than turn oven down to 325 cook 15 minutes per pound or 140 internal degrees
Roast to sit 20 minutes before craving
