     COCKTAIL SHRIMP TURNOVERS

Ingredients
3 tablespoons unsalted butter
1/4 cup chopped onions
2 tablespoons chopped green bell peppers
2 tablespoons chopped celery
1 1/2 tablespooons Emerial's original essence
1/4 teaspoon salt
1/16 teaspoon cayenne pepper
1/2 teaspoon chopped garlic
2 table spoons all-purpose flour
 
1/2 pound peeled chopped shrimp
1/4 cup grsted pepper jack chees
2 tablespoons chopped green onions
3/4 cup whole milk
2 teaspons chopped fresh parsley
1 17.3-ounce package frozen puff pastery (2 sheets)
thawed in the refrigerator
2 egg yokes, beatenwith 2 teaspons water

Instructions
Heat butter in a large skillet over meadium-high heate add onions, belll peppper,and celery. season wit thr essence, salt and cayennne pepper and cook, stiring,until the onion isslightly soft about 2 minuts. Add garlic and cook stirring until fragant, about 30 seconds Add flower and cook until te mixture is lightly golden,about 3 minutes. Add milk and continue stirring until the mixture is smooth and thick, about 3 minutes. Remove from heat. Add shrimp, chees,green onions, and parsley. Stir the mixture well. Remomove from heat and let cool. to room tempature.
Preheat the oven to425f . Role out each pastery sheet to 12x15 inchon a lightely floured surface. Trim the eages to make them even. Wth a sharp knife, cut each sheet into 20 3- inch squares. mound about 2 teaspoons of the shrimp mixture in the centr of each squares, brush 2 edges of the squares with the egg wash, fold over diagonally,and seal. crimp the eges with a fork. lightely brush the tops of the turnover with some of egg wash. Use the tip of a paring knife , make a tiny slit in the top of each turneiver so the steam ccan excape duiring the baking.
