     Zucchini Bread

Ingredients
3 cups all purpose flour
2tsp baking soda
1 1/2 tsp cinnamon
3 eggs
2 cups sugar
1 cup applesauce
2 tsp vanilla extract
2 cups shredded zucchini
1-15oz can crushed pineapple, drained
 
1tsp salt
1/2 tsp baking powder
1/4 chpped nuts

Instructions
Preheat oven to 350degrees. Grease and flour 2 loaf pans.
Combine flour, baking soda and cinnamon in a small bowl; set aside.
In another bowl beat eggs lightly. Add sugar, applesauce and vanilla; beat until creamy. Stir in pineapple and zucchini. Add salt, baking powder and nuts. Stir until moistened. Pour into prepared pans
Bake for 1 hour; cool for 10 minutes in pan; remove from pan and cool completely on rack
