     Green Bean Chop Suey (Cabbage, Squash, Asparagus)

Ingredients
Can be made with any vegetable
1 lb. of fresh green beans
4 thin cut pork chops (small roast is ok)
1 small can of tomato suace
1/4 sweet onion
1 Tbsp. ginger powder (ginger root ok)
1/4 cup soy sauce
1 tsp. oil
Fat from Pork (Cut the fat from the pork chops/roast
 

Instructions
Snip ends of green beans off and slice green beans diagonally. Cut up pork in very thin strips about 1/8" wide and 1" long (coat with ginger powder). Heat oil in large non stick pot. Fry pork in hot oil until very done, even crisp is ok. Drain oil and put in thin pieces of onion and cook until very limp. Pour in the tomato sauce and the soy sauce and let it cook into the meat until cooked down to half the size. Put the green beans in an fold with meat mixture. Cook until tender but do not overcook. Serve over white rice. I use medium Calrose rice.
