     Short Cut Chili Sauce

Ingredients
6 qts peeled & chopped tomatoes
3 cups chopped celery
2 cups chopped onion
1 cup chopped green pepper
1 - 1 1/2 cups chopped hot pepper
1/2 cup salt
2 cups sugar
1/4 cup brown sugar
1 1/2 tsp pepper
 
1 1/2 Tbsp mixed pickling spices
1 cup white vinegar

Instructions
Combine tomoatoes, celery, onion, peppers and salt. Let stand overnight. Drain in colender, but do not press. Place veg. mixture in a largeer kettle, add sugar, br sugar, peppers, mixed pickling spice tied in a cheese cloth bag, add vinegar. Bring to a boil, reduce heat and simmer uncovered for 15 min. Ladle into jars, seal. Process in a boiling water bath for 10 min.
Makes about 5 1/2 pts.
