     Butternut Squash and Barley with Turkey Casserole

Ingredients
2tsp oil
1 medium green pepper
1/2 cup minced onion
1/2 cup pearl barley
1 tsp sage
black pepper to taste
15 oz chicken broth
1 cup cubed turkey
2 medium butternut squash
 
1/2 cup crumbled feta cheese

Instructions
Heat oil in saucepan sautee pepper and onion. Add barley sage and pepper. Add broth, bring to a boil. Simmer on low 45 minutes.
Add turkey and squash, simmer 15 minutes more until all the broth is absorbed and the squash is tender. (and more broth if it's too dry)
Preheat oven to 350.
Put mixture in casserole dish, top with cheese. Bake uncovered 30 minutes or until cheese is brown.
