     Roasted Pumpkin Seeds

Ingredients
1 quart water
2 T. salt
2 c. pumpkin seeds
1 T. vegetable oil or melted, unsalted butter
 

Instructions
Preheat oven at 250 degrees.
Bring water to a boil. Add seeds and boil for 10 minutes. Drain, spread on kitchen towel to dry.
Place seeds in a bowl and toss with oil or butter. Spread evenly on large cookie sheet.
Roast seeds for 30-40 minutes. Stir every 10 minutes until crisp.
