     Pot Roast

Ingredients
Roast (6 lbs.)
2 T. vegetable oil
1 large onion, chopped
2 carrots, chopped
2 c. water
1 can beef broth
2 bay leaves
 
GRAVY:
1/4 c. butter
1/2 c. flour
1 tsp. lemon juice

Instructions
Over medium heat, brown roast. Add onions and carrots. In saucepan, bring water, broth and aby leaf to boil. Pour over roast and vegetables. Cover and bake at 350 degrees for 2-1/2 to 3 hours; turning once.
For gravy, stain pan juices, reserving 2 cups. In saucepan over medium heat, melt butter. Stir in flour until smooth. Gradually stir in pan juices, bring to a boil. Cook and stir 2 minutes. Add lemon juice; mix well.
