     Lentil Loaf (or Patties)

Ingredients
2 1/2 c. onion, finely chopped
2 c carrot, grated
5 cloves garlic, diced
1/4 c. veg broth or water
2 c. short-grain brown rice, cooked
2 c. lentils, cooked & mashed
2 c. rolled oats
2 tbsp. dark miso (traditional or red)
1 tbsp. soy sauce
 
2 tbsp. veg broth or water, hot
1/2 c. fresh parsley, chopped fine
1 tbsp. sage, dried
1 tsp. celery seed

Instructions
Serves 6-8 Prep time: 20 min. (need cooked rice and lentils) Cook time: 1 hr. 10 min. at 350 deg.
Saute onion, carrot & garlic in 1/4 c. broth or water for 10 min. Mix with rice, lentils & oats. Mix miso & soy sauce with 2 tbsp. hot broth or water to dissolve. Add to mixture. Add parsley, sage & celery seed. Mix until all are combined. Pack into greased loaf pan and bake 1 hr. or until firm.
Note: Can be formed into 6-8 patties. Bake on lined or greased baking sheet for 20 minutes on each side.
