Ingredients
2 tablespoons curry paste
800g chicken thigh fillets, cut into 2cm pieces
1 cup white medium grain rice
11/2 cups (375ml) chicken stock
 

Instructions
heat a large saucepan over high heat, add curry paste, cook, stirring about 1 minute, or until fragrant.
add the chicken and cook, stirring until browned all over.
add the rice and chicken stock, bring to the boil, reduce heat and simmer, covered for about 15 minutes.
remove from the heat and stir well. cover dish and stand for 5 minutes. season to taste.
