     Grandma Barbara's Apricot Cobbler

Ingredients
3/4 C Sugar
1/4 C Shortening
1 1/2 C Flour
2 tsp Baking Powder
1/4 tsp Salt
1 C Milk
2 Cups Boiling Water
For Top:
 
1 C Sugar (or less, depending on sweetness desired)
4 Cups Fresh Apricots, pitted and halved
1/4 cup butter, chilled

Instructions
Preheat Oven to 350 degrees. Mix Sugar and shortening. Mix Flour, Baking Powder and Salt. *Add 1/3 of Flour mix to Shortening mix. Mix till smooth. add 1/2 milk. Mix till smooth. Repeat from * till all mixed and smooth. Pour into greased cake pan. place apricots, cut side down on top. Sprinkle with sugar. Dot top with butter. Place in pre-heated oven. Pour boiling water over top. Bake for 1 hour, or until water is absorbed. Serve hot with Cream or cool and serve Ala Mode.
