Heat peanut oil in hot wok, add garlic and ginger and stir quickly for 1 min. Add Beef and Choy Sum stems stiring until almost cooked. Add sauce mix and sugar and stir well.
Pour boiling water over rice noodles to separate. Add noodles and Choy Sum leaves to wok. Heat through. Add a little water if sauce seems to thick.
Serve.
