     Chilli Beef & Rice Noodle Stirfry

Ingredients
2 cloves of Garlic, finely chopped
1 small knob of Ginger, finely chopped
1 teaspoon of Sambal Oelek
3 tbsp of Kepac Manis
3 tbps of Soy Sauce
1 tbps Sesame oil
1 tbps of Rice Wine
I bunch of Choy Sum or Baby Bok Choy, stalks & leaves separated
500g Beef Mince
 
2 cubes of Palm Sugar
500g fresh Rice Noodles
1 teaspoon of White Pepper
Peanut Oil, for stirfrying

Instructions
Combine Sambal Oelek, Kepac Manis, Soy Sauce, Rice Wine & Sesame Oil.
Heat peanut oil in hot wok, add garlic and ginger and stir quickly for 1 min. Add Beef and Choy Sum stems stiring until almost cooked. Add sauce mix and sugar and stir well.
Pour boiling water over rice noodles to separate. Add noodles and Choy Sum leaves to wok. Heat through. Add a little water if sauce seems to thick.
Serve.
