     Chicken & Artichoke Salad

Ingredients
1 cup chopped cooked chicken
1-1/2 cup cooked white rice
1 (16oz) can artichoke hearts, drained & chopped
1/4 cup scallions, chopped
1/4 cup chopped parsley
2 Tbl. dry tarragon
DRESSING:
1 tsp. salt
 
1/8 tsp. pepper & dash cayenne pepper
3 Tbl. red wine vinegar
1/2 cup vegetable oil
1/4 tsp. paprika

Instructions
Combine chicken, rice, artichoke hearts, scallions, parsley & tarragon in a medium bowl. Pour dressing over chicken mixture, blend well. Refrigerate for 8 hours or overnight.
Whisk all ingredients together and pour over chicken mixture.
