     Wild Mushroon Asparagus Rice

Ingredients
2 teaspoons olive oil
2 shallots, chopped
2 cloves garlic, minced
8 cups sliced wild mushrooms
1 teaspoon dried thyme
2 cups cooked Arborio rice
1 cup reduced-sodium beef broth
2 cups asparagus spears
 
1/2 cup grated Parmesan
2 T parsley
salt and pepper

Instructions
Heat oil. Add shallots and garlic and cook 1 minute. Add mushrooms and saute 5 minutes. Add thyme and cook 1 minute, until fragrant.
Add rice and broth and asparagus and bring to a simmer. Simmer 5 minutes, Stir in Parmesan and chopped parsley. Season, to taste, with salt and black pepper.
