Ingredients
1cup plain flour
1/4cup demerara sugar
1tsp baking powder
1 1/2cups cornmeal
1 1/2cups buttermilk variation soya milk
2 eggs
6tbsp sunflower oil
1/2cup butter melted
 

Instructions
Preheat the oven to 200c/gas mark 6. Grease a loaf pan. Sift the flour, sugar, & baking powder into a bowl. Add the cornmeal & stir to blend. Make a well in the centre.
Whisk together the buttermilk, eggs, oil & butter. Pour the mixture into the well.Stir until just blended.
Pour into the loaf tin. Bake until a skewer inserted in the centre comes out clean approx 45mins.
Serving Suggestions
Serve hot or cold or at room temperature
