2 pounds (about 6 regular, or 12 small red) potatoes, unpeeled, very thinly sliced
1 cup water
1/2 teaspoon salt
1/2 teaspoon paprika
1/4 teaspoon dried thyme leaves
pepper to taste
Instructions
Heatnon-stick dutch oven over mdium-high heat until hot. Add sausage, cook 4-5 minutes until no longer pink. Remove sausage from dutch oven and drain on paper towels.
Remove excess fat from dutch oven. Add onion and cook over medium heat for about 5 minutes. Add cooked sausage and all remaining ingredients, mixing gently but thoroughly. Bring to boil.
Reduce heat to medium-low, Cover tightly and cook 8-10 minutes or just until potatoes are tender. Let stand 10 minutes, covered, to allow flavors to blend and light sauce to form.

Suggestions
1. To make an all-in-one meal, add 16 oz frozen mixed vegetables prior to boiling.
