Prepare the fruit by washing and allowing it to dry on kitchen towel being very careful not to bruise it.

Meanwhile break the jelly into cubes and put them into a microwaveable measuring jug. Add 3 tablespoons of the champagne and the sugar and stir everything together and then heat in the microwave on full power for 1½ minutes.

Make sure that everything has dissolved completely before adding the remaining cold champagne and the lime juice. Then leave the liquid to cool. While that is happening, divide the fruit among some serving glasses.

|
Next pour the jelly over the fruit. over the glasses with clingfilm and put them in the fridge for three hours, by which time the jellies will have reached a “soft” set.
