Disolve yeast into water. Let stand 5 minutes. Stir in oil. Add flour, 2 cups and salt to yeast mixture. Turn dough out onto counter, knead 5 minutes. Keep adding flour until all is incorporated. Cover, let rise for 1 hour or until doubled in size, in a warm place
Once dough is risen, punch down, add in any desired ingredients (fresh herbs, garlic, cheese). Sprinkle light layer of cornmeal on baking pan. Place dough on pan. Cover, let rise 1 more hour. Once dough has risen the second time, pre-heat oven to ۫ 350.
Combine milk and egg white, brush over dough. Score dough with X. Bake 30 minutes or until tapped loaf sounds hollow.
