     Triple Chocolate Cheesecake

Ingredients
Chocolate pie crust mix
2-8 oz. neufchatel cheese, room temperature
3/4 cup sugar
1/4 cup cocoa powder
1 large egg
2 large egg whites
1 2/3 cup sour cream
2 tsp. vanilla
2 oz. bittersweet chocolate, coarsley chopped
 

Instructions
Preheat oven 350˚ Wrap 10" springform pan with foil to prevent leaks. Combine all ingredients in a mixer. Once combined, add chocolate chunks. Pour batter into crust.
Bake 40 minutes. Turn oven off and prop open the oven door. Let cool 45 minutes in oven. Then cool to room temperature. Cover, place in fridge until serving.
