     Chicken Satay with Spicy Peanut Sauce

Ingredients
---Peanut Sauce---
1/2 cup Chunky peanut butter
2 tbsp Lemon juice, soy sauce, sherry, brown sugar
1/2 tsp curry powder, fresh ginger
dash of hot sauce
1 clove crushed garlic
1/4 cup milk
---Chicken---
1 lbs Boneless chicken breast
 
1/4 cup soy sauce
1/4 cup sherry
1 lemon, grated rind and juiced
2 tbsp peanut oil
canteloupe cubed (1 inch / 2.5 cm)

Instructions
Cut chicken into strips and marinate for at least 4 hours(Not too long though!)
In a small saucepan, combine peanut butter, ginger, milk, soy sauce, lemon juice, sherry, brown sugar, curry powder, hot pepper sauce and garlic. Heat until warm.
Put chicken on skewers, grill on high heat for 2 minutes each side. Add 1 piece cantaloupe to each skewer and cook 1 minute longer or until chicken is tender.
Serve 4 skewers per person with peanut sauce for dipping.
Serving Suggestions
With rice.
