     Wild Rice Pecan Waffles

Ingredients
1 cup all purpose flour
1/2 tsp salt
2/3 cups milk
1 1/2 cups cooked wild rice
1 tsp baking powder
2 eggs, separated
1/4 cup vegetable oil
1/2 cup chopped pecans
 

Instructions
In a bowl, combine the flour, baking powder and salt. In a mixing bowl, beat egg yolks, milk and oil. Stir into dry ingredients until moistened.
In another bowl, beat egg whits until stiff peaks form, and then fold into the batter.
Fold in the rice and pecans
Bake in a preheated, greased waffle iron.
