     Kyle Keimer’s White Chicken Chili

Ingredients
2 cups chopped chicken, 4-5 chicken breasts
1 48 oz can Great White Northern beans
2 14 oz cans white corn
1 14 oz can stewed or chopped tomatoes
1 tbls oil
16 oz sour cream
1 medium onion, chopped
3 cloves minced garlic
1 4 oz can chopped green chilies
 
2 tsp ground cumin
½ tsp salt
1 tsp oregano
¼ tsp cayenne pepper
2 14 oz cans chicken broth
1 cup water
3 cups Monterey Jack cheese

Instructions
In a skillet cook onion and spices in oil until transparent. Combine beans, corn tomatoes, onions, chilies, broth, water and chicken (precooked or not) in a soup pan. Cook approximately 1 hour. Add cheese and sour cream and heat through just before serving.
