     chicken tamale casserole

Ingredients
1 cup shredded mexican blend cheese
1/3 cup milk
2 eggs
1/2 teaspoon cumin
1/8 teaspoon ground red pepper or hot sauce
1 14 oz can creamed corn
1 cup corn muffin mix (i like bob's red mill)
1 4 oz can green chiles
 
1 10 oz can red enchilada sauce
2 cups cooked and shredded chicken breast
1/2 cup sour cream or plain greek yogurt

Instructions
preheat oven to 400.
combine 1/4 cup cheese with milk, egg, cumin, red pepper, corn, muffin mix, and chiles. pour into a greased 9x13 pan.
bake for 15 minutes or until set. pierce entire surface with a fork many times. pour enchilada sauce on top. top with chicken, sprinkle with remaining cheese. bake for 15 minutes or until cheese melts.
remove from oven and let stand for 10 minutes. serve with sour cream.
Serving Suggestions
serve with black beans and rice.
