     Salmon with Couscous

Ingredients
1 lb carrots (grated)
1 cup couscous (uncooked - giant pearl)
1/2 cup slivered almonds
1/2 cup raisins (I like the yellow ones)
1/4 cup chopped fresh mint
1 TBL olive oil
salt and ground pepper
4 skinless salmon fillets (6 to 8 oz. each)
 

Instructions
Preheat oven to 450. In a 9x13 baking pan mix together carrots, couscous,almonds,raisins, mint, oil, 1-1/4 cups water, 1 tsp salt, 1/4 tsp pepper.
Place salmon fillets on top of couscous mixture; season generously with salt and pepper. Cover pan with foil; bake until fish is opaque throughout, 30-35 minutes.
Serving Suggestions
If you double the recipe you dont need to double the carrots.
