     Lasagna

Ingredients
1.5 lb hamburger
4 Hot Italian sausages - skin removed
1 lg. Sweet Onion - chopped
5 cloves garlic - minced
1 green pepper - chopped
2 red pepper - chopped
1/2 Jalapeno pepper - minced
(tsp. red pepper flakes if no Jalapeno used)
1 tsp. sugar
 
1 tsp. Anise seed
1 tin Spaghetti Sauce
1 small tin tomato paste
1 lg tin plum tomatos - mashed
1/2 to 1/2 c. red wine
1 1/2 tub of Ricotta cheese
1/2 c. chopped fresh spinach
Parmesan
1/2 c. fresh chopped parsley

Instructions
Fry hamburger & season w salt, pepper and italian season. Remove from pan. Fry sausage after you have taken case off. Remove from pan. Add next 5 ingredients. Saute until veg are soft. Add hamburger and sausage. Add Tomato paste and stir. Add Spaghetti sauce, plum tomatos & wine. Bring to boil and then simmer. Add sugar, anise, italian seasoning, salt & pepper to taste. Simmer for at least an hour before making lasagna. Ricotta filling: Mix ricotta cheese with 1 1/2 c. chopped spinach, 1/2 c. fresh grated Parm or Asiago or romano cheese, some grated pepper and 1 tsp. Italian seasoning.
Boil Lasagna noodles until dente (a little undercooked). Rinse and drain. In long lasagna pan spoon enough sauce on bottom to cover. Add one layer of lasagna and spread layer of sauce over. Add another layer of lasagna and spoon Ricotta Filling over. Add another layer of lasagna and use up remaining sauce.
Cover with foil and put in 350 oven for 1 hour. Turn off oven for 1 hour. Restart oven at 325 for 1/2 hour.
Remove foil before serving and top with parm & mozzerella cheese. Put back in oven until cheese is nicely melted. Remove and sprinkle some fresh parsley ontop. Let sit for 15 min. before cutting.
