     Panko Chicken Parmesan

Ingredients
chicken breasts
flour
eggs
panko bread crumbs
pasta
tomato sauce
mozzarella cheese
vegetable oil
 

Instructions
Split chicken breasts into 2 and pound them flat between 2 pieces of plastic wrap. Heat enough oil in skillet to go about halfway up chicken.
Put out 3 pie plates. Put flour in the first, beaten egg in the second, and panko in the 3rd. Season the panko with salt, pepper, and Italian seasoning. Dredge the chicken in the flour, then egg, then the panko. Put in hot skillet and cook each side for 3-4 minutes, until golden. Put on baking sheet in 250 oven to keep warm.
Cook pasta and make or warm tomato sauce. On a plate, put a layer of pasta, then the chicken breast, sauce and sprinkle with mozzarella.
