12 Hour Mashed Potatoes

Ingredients
-
3 lbs. potatoes, peeled, cooked, hot
-
8 oz. package cream cheese, at room temperature
-
¼ C. butter
-
½ C. sour cream
-
2 eggs, lightly beaten
-
¼ C. finely chopped onion
-
½ C. milk
-
1 tsp. salt
-
Dash of pepper

Chives

Instructions
Cook and mash potatoes in a large mixing bowl. Cut the cream cheese and butter into small pieces. Beat in cream cheese and butter into potatoes. Add sour cream and mix well. Combine eggs, onion, and milk in a separate bowl-mix well. Pour into the potato mixture. Add salt and pepper. Beat mixture until fluffy. Spoon into 9 inch baking dish. Chill, covered for 12 hours or longer. Bake at 350 degrees for 45 minutes. Garnish with chives.
