Ingredients
5 lb Beef Tenderloin
Olive Oil
Perini Ranch Steak Rub - Recipe Found Under Sauces in Cookbook
 

Instructions
Preheat oven to 475 degrees. Remove fat and silver skin. Brush the meat with olive oil and completely coat the tenderloin with the dry rub. Insert a meat thermometer. Place in oven for 10 minutes at 475 degrees; lower the oven temperature to 425 degrees and continue cooking for about 20 - 25 minutes or until the thermometer reads 130 degrees for nedium-rare.
Remove the tenderloin from the oven and let it stand for 10 minutes before slicing. The key to cooking tenderloin is to be sure not to overcook it. I recommend that you slice the beef thinly and serve it with Roasted Garlic-Horseradish Cream (Recipe found under Sauces in cookbook).
