1 cup butter-flavored shortening (I actually use 1 cup of butter at room temperature)
-
1 cup sugar
-
2 eggs
-
1 teaspoon vanilla extract
-
2 cups all-purpose flour
-
1 teaspoon baking soda
-
1 teaspoon ground cloves
-
1 teaspoon ground cinnamon
-
3 medium ripe bananas, mashed
-
2 cups quick-cooking oats
-
1 cup (6 ounces) semisweet chocolate chips
Instructions
In a large bowl, cream shortening (or butter) and sugar. Add eggs and vanilla; mix well.
In another bowl, combine flour, baking soda, cloves and cinnamon; add to creamed mixture.
Stir in bananas, oats and chocolate chips.
Drop by rounded teaspoonfuls onto greased baking sheets. Bake at 375 degrees for 10-12 minutes. Remove cookies to wire racks to cool.
