     Honey Cake

Ingredients
2 1/2 cups plus 2 tablespoons all-purpose flour
2 1/4 teaspoons baking powder
3/4 tablespoon baking soda
3 tablespoons ground cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon allspice
1/2 teaspoon salt
1 cup granulated sugar
1/2 cup brown sugar
 
3 eggs, lightly beaten
1 teaspoon vanilla extract
3/4 cup vegetable oil
3/4 cup honey
3/4 cup warm coffee or strong black tea
1/2 cup orange juice

Instructions
Preheat oven to 350 F. Grease and flour a 10-inch Bundt pan. In a large bowl, mix flour, baking powder, baking soda, cinnamon, cloves, allspice and salt. Mix well. Make a well in the center and add remaining ingredients. Use an electric mixer to completely blend the batter, making sure no ingredients are stuck to the bottom or sides. Pour batter into baking pan, and place pan on a cookie sheet. Bake for 60-75 minutes or until cake tester comes out clean. This is a very moist batter so it may take even longer to fully bake. Let cook for 20 minutes before removing cake. Allow to cool to room temperature before serving
