     Biscochitos (Mexican cookies)

Ingredients
1 cup sugar
1/2 cup shortening
1/2 butter at room temp
1 egg
3 cups of flour
1/4 tsp salt
1 1/2 tsp baking powder
2 Tbls anise seed
1/4 cup anisette liqueur or orange juice
 
2/3 cups of sugar
1 tsp cinnamon

Instructions
Heat over to 400. Cream 1 cup sugar, shortening and butter in large bowl until fluffy. Add egg. Beat well. Add flour, salt, baking powder and anise seed. Mix well. Add anisette or orange juice. Mix until completely blended. Roll into a log and chill in freezer for about 30 min. Cut into 1/8 to 1/4" thick slices. Mix together 2/3 cup sugar and cinnamon and sprinkle on cookes. Bake 10-12 min or until golden brown.
