     Leek and potato Soup

Ingredients
3 leeks
2 potatoes
1 clove of garlic
1 tbl sp of olive oil
1 tbl sp of sour cream (optional)
salt and pepper
 

Instructions
Peel the potatoes and cut in chunks. Cook until ready for about 15 min. Cut off the harsh green parts of the leeks, and cut the remainder in rings.
In cooking pan (for a soup) pour 1 tbl sp of oil, saute garlic for a 1 or 2 min. Add chopped leeks. Cook for about 8 min., mixing once in a while.
Add cooked potatoes, and about 2/3 of the water they were cooking in (add more, depending on how thick you want it to be).
With a hand blender mix everything in a pure. Serve with sour cream.
