     Lemon Melt-aways

Ingredients
Cookies -
1 1/4 cups all-purpose flour
1/2 cup cornstarch
1/3 cup powdered sugar
3/4 cups butter, softened
1 tsp grated lemon peel
1 tsp lemon juice
Frosting
 
3/4 cup powdered sugar
1/4 cup butter, softened
1 tsp grated lemon peel
1 tsp lemon juice

Instructions
In a large mixer bowl, combine all cookie ingredients. Beat at low speed, scraping bowl often, until well mixed
Divide dough in half. Shape each half into 8x1 inch roll. Wrap in plastic food wrap. Refrigerate until firm. (1 - 2 hours)
Heat oven to 350º. With a sharp knife, cut each half into 1/4 inch slices. Place 2 inches apart on cookie sheet. Bake for 8 - 12 minutes or until set. (Cookies will not brown). Cool completely
In a small mixer bowl, combine all frosting ingredients. beat at medium speed, scraping bowl often, until fluffy (1 - 2 minutes). Frost Cooled cookies
