     Jambalaya

Ingredients
Vegetable oil - 2 tablespoons
Smoked sausage - 1 pound, cut into 1/4" slices
Onion - 2 cups, chopped
Bell peppers - 3/4 cup, chopped
Cajun style seasoning - to taste
Long grain white rice - 1 cup
Tomatoes - 1 can (14-15 oz), chopped with juices
Garlic - 4 to 6 cloves, chopped
Water - 2 cups
 
Bay leaves - 4 whole
Thyme - 1/4 teaspoon
Shrimp - 1 pound, medium size, chopped & deveined
Green onions - 1/4 cup, chopped

Instructions
Heat vegetable oil in large saucepan or dutch oven. Add sausage and cook for 2 minutes. Add onions, peppers and garlic. Season to taste with Cajun spices and saute for 6 to 8 minutes or until vegetables are golden, wilted & soft.
Add rice and stir to coat evenly. Add tomatoes & juice, bay leaves, thyme and water. Cover and cook over medium heat for about 20 minutes, stirring occasionally. Meanwhile, season shrimp with Cajun spices in a small bowl.
Add shrimp after 20 minutes and cook for additional 10 minutes. Rice should be tender, liquid absorbed and shrimp pink.
Remove from heat and let stand for 5 minutes. Remove bay leaves, stir in green onions and serve.
