Heat vegetable oil in large saucepan or dutch oven. Add sausage and cook for 2 minutes. Add onions, peppers and garlic. Season to taste with Cajun spices and saute for 6 to 8 minutes or until vegetables are golden, wilted & soft.
Add rice and stir to coat evenly. Add tomatoes & juice, bay leaves, thyme and water. Cover and cook over medium heat for about 20 minutes, stirring occasionally. Meanwhile, season shrimp with Cajun spices in a small bowl.
Add shrimp after 20 minutes and cook for additional 10 minutes. Rice should be tender, liquid absorbed and shrimp pink.
Remove from heat and let stand for 5 minutes. Remove bay leaves, stir in green onions and serve.
