Add the rest of the butter and saute mushrooms and onion and
celery until soft.
Mix bread cubes, eggs, milk, cheese, salt and pepper in a large
bowl.
Add the sausage and vegetables and mix well May refrigerate
overnight at this point. Do not stuff bird until ready to cook. Cook
what doesn't fit in the turkey in a casserole basting with the turkey
drippings.
