1/2 C cold mashed sweet potatoes without added butter or milk
1/4 C butter or marg. melted
1 C chopped fresh or frozen cranberries
cinnamon sugar
Instructions
in a bowl, combine flour, sugar baking powder, salt, cinnamon and
nutmeg. In a small bowl combine egg, milk, sweet potatoes and
butter. stir into dry ingredients just until moistened.
Stir in cranberries. fill greased or paper lined muffin cups half full.
sprinkle with cinnamon sugar and bake at 375 for 18-22 min. cool
in pan 10 min before removing to a wire rack
