About 50 minutes before using: Melt butter or margarine in large saucepan over medium heat; cook celery and onions until tender, about 10 minutes.
Add parsley, salt, poultry seasoning, and pepper; mix well.
Stir in bread cubes and eggs; mix well. Makes enough stuffing for one 8-11 lb. turkey, about 8 cups.
For safety, instead of filling the bird with stuffing, spoon the mixture into a casserole bowl and bake it for about 30-40 minutes along with the bird.
