Ingredients
2 T unsalted butter
six slices white sandwich bread
3 ripe plum tomatoes thinly sliced crosswise
1 T extra virgin olive oil
dried oregano
salt and pepper
10 oz. mozzarella
 

Instructions
preheat oven to 350. butter bread slices on one side and cut in half. lay the bread pieces on a baking sheet buttered side up. place tomato slices in a shallow dish and sprinkle them with olive oil, salt and pepper to taste and toss gently. put a spoonful on each slice of bread. cut mozzarella into 12 thin slices to fit the bread pieces and top each piece with a piece of mozzarella. transfer to oven and bake until mozzarella is almost melted.
