Fill a medium saucepan halfway with water. Bring to a boil and add 1 tbsp. salt. Add the chicken, reduce heat to medium, and simmer 12-14 minutes. Transfer chicken to a cutting board, let rest 5 minutes and then slice into 1/2 inch slices.
In a small bowl, whisk together the oil, lime juice, honey, 1/2 tsp. salt and 1/4 tsp. pepper.
Place a pile of salad on a plate, top with a sliced chicken breast, avocado, and radishes. Drizzle with the vinaigrette. Serve.
