     Christian Apple Cake

Ingredients
3 cups flour
1 tsp. salt
1 tsp. baking powder
3 eggs beaten
2 cups sugar
2 tsp. vanilla
1 cup vegetable oil (or canola)
3 granny smith apples (peeled cored and sliced...but not too thin)
 

Instructions
Combine flour, salt and baking bowder and put aside. Mix eggs, sugar and vanilla together in a separate bowl.
Add oil to flour mixture (mixture will be very thick and pastey--not like most cake batters). Combine with egg mixture.
Toss apples in a third bowl with cinnamon and sugar. I just sprinkle cinnamon (continue stirring) until they are coated and then I put in about 1/8 cup of sugar. Stir again to coat apples. Fold apples in the batter.
Bake in an ungreased pan (angle food pan or bundt pan) in a COLD oven at 350 for 1 1/2 hours. It sounds crazy, but it works.
Serving Suggestions
drizzle carmel sauce on it and top with ice cream or whipped cream.
