     Cooper Mac

Category   Salads - Soups - Sidedishes
Sub Category   None
Servings   20
Preptime   15 min.

Ingredients
3 boxes (3lbs.) of Elbow Macaroni (I like Barilla)
2 lbs. Cooper sharp american cheese
3 sticks of butter
3 cups of milk (whole or 2%)
salt (opt.)

Instructions
Cook the macaroni in a large pot. I usually cook it one min. less than instructed on the box. Drain the macaroni. Do not rinse the macaroni. Put the macaroni back into the same large pot.
Add the butter while the macaroni is still piping hot and let it melt in. Then add the cooper sharp cheese, slice by slice gradually stirring it in letting it melt (You can put the heat back on very low, but be careful not to let it boil! Just enought to keep things warm enough to melt).
After all that melts, I add the milk to make it creamy. Then I put it all into a large tin and cover the top with more of the sliced cheese. Preheat the oven at 350. Bake just long enough to melt the sliced cheese on top.
Serving Suggestions
I often do cooper mac and hot dogs. It is great for a kids birthday party or large gathering with kids. You can do a smaller amounts.
