Bring broccoli and water to full boil in medium saucepan on medium high heat. Add rice; stir.
Cover; remove from heat. Let stand 4 to 5 minutes; stir in Velveeta.
Cover; let stand 4 to 5 minutes. Stir until Velveeta is melted.
VARIATION: Substitute 2 cups chopped fresh broccoli flowerettes for frozen broccoli and increase water to 1 1/4 cups.
