Cut Pork into small 1/2 inch cubes.
Mix Eggs with Milk.
Mix Cornstarch with Ginger & Garlic.
Roll Cubes in Egg Mixture, then Cornstarch mixture. Set aside.
Fry Onion 3 min in oil.
Add Meat, and fry for 3 min, or untill browned on outside.
Add Soy Sauce, Bell Pepper, Water, Juice from Pineapple, Vinegar & Ketchup. Simmer on low, untill thickened, about 15-20 Min. Add Pineapple & serve over rice.
