     Spicy Vegetarian Harvest Soup

Ingredients
2 tablespoons Olive Oil
1 1 /2 Cup Diced Red Onion
1 1/2 Teaspoons Cumin
1 Teaspoon Chipotle Chile Powder
1-28 Ounce Cans Diced Tomatoes
1 Medium Cauliflower, cut into flourets, about 4 Cups
2 Medium Sweet Potatoes, peeled and cut into 1 Inch Cubes
4 Large Carrots, peeled and cut into 1/2 thick slices
1 Large Green Bell Pepper cut into 1 Inch pieces
 
1- 15 Ounce Can Mexican Chili Beans
1/2 Teaspoon Salt
Sliced Scallions
Cooked Brown Rice

Instructions
Heat olive oil in large pot, add onion, and cook for 5 minutes,stir in cumin, chile powder and cook 1 minute. Stir in tomatoes,cauliflower, potatoes, carrots and green pepper and salt. Cover and simmer 25 minutes. Add beans and simmer 5 minutes, until veggies are fork tender.
Place warm rice in bowls and top with soup. Sprinkle on scallions as garnish.
