     Mom's Peanut-Coconut Sauce

Ingredients
1 Tblsp Peanut Oil
1/1/2 tsp Minced Garlic
1/2 tsp Sirachi Hot Pepper Sauce
1/4 tsp Ground Ginger
1/2 tsp Brown Sugar
5 Tblsp Peanut Butter
1 12oz can of Coconut Milk or water
Salt to taste
 

Instructions
Heat oil in sauce pan. Add Garlic, and stir fry 1 min.
Remove from Heat. Stir in Chili Sauce, Ginger & Sugar untill sugar has dissolved. Add Peanut Butter and stir untill it becomes smooth.
Gradually, add Coconut Milk, stirring constantly, making smooth between additions. Return to Med Heat, stirring constantly, to keep it from boiling. When heated through, remove from heat.
It should be of a pouring consistancy and can be thinned with coconut milk or water.
Serving Suggestions
Serve over Beef Satay on a bed of rice. Serve remaining sauce in heated gravy boat.
