     Twice Baked Cheesy Potatoes

Ingredients
4 medium potatoes
Shortening
2 Tablespoons butter or margarine
1/2 cup sour cream
1/8 teaspoon pepepr
1/2 cup shredded American cheese
1/4 cup cooked bacon pieces (optional)
 

Instructions
Scrub potatoes with a brush. For soft skins, rub with shortening. Prick potatoes with a fork; bake at 425 degrees for 40 to 60 minutes, or until tender. use a knife to cut a lengthwise slice from the top of each potato; discard skin from slice.
Use a spoon to scoop out the inside of each potato, leaving a 1/2 inch shell; set potato shell aside. Ina bowl, mash the slices from tops of potatoes and the insides of potatoes. Add butter or margarine; beat in sour cream and pepper. Stir in shredded American cheese and cooked bacon pieces, if desired; spoon the potato mixture into the potato shells.
Place in shallow baking pan; bake at 425 degrees for 20 to 25 minutes, or until lightly browned.
