     Jambalaya

Ingredients
1 onion
1 cup Green Pepper
1 cup Celery
4 Garlic cloves
Sausage, Chicken and/or Shrimp, Ham
3 cups diced Tomatoes
2 1/2 cups chicken stock
2 teaspoons thyme
1/2 teaspoon oregano
 
1 teaspoon parsley
1 teaspoon cayenne
1 1/2 teaspoons salt
1 teaspoon black pepper
6 cups cooked long-grain rice
Tabasco sauce (to offer at table)
2 tsp butter
1/2 cup carrot
2 bell peppers, diced

Instructions
Add butter, onion and meats to large pot. Do not add shrimp. Fry until onion becomes translucent and meats are nearly cooked.
Add vegetables. Fry for 5 minutes.
Add chicken stock and herbs. Cook on medium heat until slightly reduced.
Remove from heat. Add shrimp, let sit for 3 minutes. Then add cooked rice. Mix and serve.
