     Bethany's Capellini

Ingredients
28 oz. can whole peeled tomatoes
3 T. olive oil
2 cloves garlic, minced
salt and pepper to taste
4 fresh basil leaves (dry okay)
Capellini pasta
 

Instructions
Heat oil and saute with garlic till browned. Add tomatoes and juice - turn to high and boil till liquid reduces slightly, about 5 minutes. Simmer with lid off for 30 minutes and break tomatoes apart with spoon. Add salt and pepper at this point. Add basil and let cook another 15 minutes. Serve with pulled apart chicken (roasted or rotisseri) and capellini pasta.
